ingredients
200 g rice,
300 g thin beef slices,
1 tbsp mustard (to baste),
¼ onion/10 g bacon slices (roasted),
1 garlic clove (to baste),
120 g celeriac,
140 g carrots,
1 pickled cucumber,
sauce:
rest: carrots/celeriac,
¼ onion,
½ garlic clove,
70 ml red wine,
200 ml water,
½ tomato peeled,
¼ tsp paprika,
2 pinches of rosemary,
2 pinches of thyme,
¼ tsp honey,
salt/pepper,
5 g butter
how you make it:
stove plate on ↑6/6, warm olive oil (→olive oil), stove plate on ↓2/6 sauté onions (→onion) in a pan
deglaze it with a bit water and put it out of the pan to sauté the bacon slices crispy (without oil!), then ↓0/0
now baste the beef slices with a garlic clove and mustard
spice it with salt/pepper
for each beef slice: put 2-3 strips of celeriac/carrots/pickled cucumber (cut in strips 3-5 mm thick/ 8-10 cm long), 1 tsp roasted onion and 1-2 bacon slices on it
roll it and fix it with sticks
now prepare the sauce: stove plate on ↑6/6, warm olive oil (→olive oil), stove plate on ↓2/6, sauté onions (→onion) and after that garlic (→garlic) in a saucepan
deglaze it with red wine and stir
stove plate on ↑4/6, add the water and bring it to a boil with lid on and add the vegetables (rest)
stove plate on ↓2/6
leave it for 10-15 minutes with lid on
stove plate on ↓1/6
leave it to roast the roulades in another pan, every side 1-2 minutes
add them to the saucepan
leave it now for 2 hours simmering with lid on
then remove from stove, the roulades from saucepan and use a immersion blender to make it to a homogeneous sauce
then put it all together in the saucepan again and back on stove plate to test, if salt/pepper is alright and add it, if necessary
add butter and stir
↓0/0 after 1-2 minutes and leave it with lid on for a couple of minutes
serve it with rice
